Description

A delicious and nutritious bowl packed with sweet potatoes and black beans, perfect for a quick meal that satisfies.


Ingredients

  • 2 large sweet potatoes
  • 1 can of black beans (drained and rinsed)
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, lime juice, feta cheese

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Chop your sweet potatoes into bite-sized cubes.
  3. Season the sweet potato cubes with olive oil, cumin, chili powder, salt, and pepper, then roast for 25-30 minutes.
  4. Heat the black beans in a small pot over medium heat until warmed through.
  5. Combine the roasted sweet potatoes with the black beans and add lime juice if desired.
  6. Serve in bowls and garnish with avocado, cilantro, or feta cheese.
