A quick and easy one-pot meal that combines ground beef, potatoes, and veggies in a hearty casserole perfect for busy families.
Ingredients

- 1 pound of ground beef (or turkey)
- 4 cups of diced potatoes (frozen hash browns work too!)
- 1 cup of chopped onion
- 1 cup of chopped bell pepper (red, green, or blue)
- 1 can (10.5 oz) of cream of mushroom soup
- 1 cup of shredded cheese (cheddar)
- Salt and pepper to taste
- Optional: garlic powder or your favorite seasoning blend
Instructions
- Brown the ground beef in a skillet over medium heat.
- Drain excess fat.
- Add the browned beef to the slow cooker and layer in potatoes, onion, and bell pepper.
- Pour the cream of mushroom soup over the top.
- Sprinkle salt, pepper, and any optional seasonings.
- Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
- Add shredded cheese about 30 minutes before serving.
- Serve and enjoy!
