Description
A deliciously moist cinnamon coffee cake that’s perfect for breakfast, brunch, or dessert.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 cup packed brown sugar
- 2 tsp cinnamon
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the sour cream and vanilla extract.
- In another bowl, mix together the flour, baking soda, and a pinch of salt.
- Gradually add this dry mixture into the wet ingredients. Stir just until combined.
- In a separate bowl, combine your brown sugar, cinnamon, and nuts (if using).
- Pour half of the batter into the prepared pan, then sprinkle half of the cinnamon mixture on top.
- Pour in the remaining batter and finish with the rest of the cinnamon sugar.
- Bake for about 30-35 minutes, or until a toothpick comes out clean.
- Let it cool for about 10 minutes in the pan before transferring it to a wire rack.
Notes
Feel free to substitute the sour cream with Greek yogurt for a healthier version. You can also try adding fruits or chocolate chips for variations.
