- 4 chicken thighs
- 2 tablespoons jerk seasoning
- 2 tablespoons olive oil
- Juice of 1 lime
- 1 cup diced fresh pineapple
- 1/4 red onion, finely chopped
- 1 jalapeรฑo, minced (optional)
- Juice of 1 lime
- Fresh cilantro, to taste
- Salt, to taste
- Pepper, to taste
- Cooked rice or quinoa
- Black beans
- Avocado slices
Instructions
- Marinate the chicken: In a bowl, mix jerk seasoning, olive oil, and lime juice. Add the chicken thighs and let them marinate for at least an hour (but overnight is even better!).
- Cook the chicken: Grill, bake, or pan-sear it until cooked through (165ยฐF internally). If using a grill, watch for flames!
- Rest and slice: Once the chicken is done, let it rest for a few minutes, then slice it into strips.
- Prepare the salsa: In a mixing bowl, add the diced pineapple, chopped red onion, jalapeรฑo, lime juice, cilantro, salt, and pepper.
- Mix everything together until well combined. Taste as you go!
- Assemble the bowl: Start with rice or quinoa, add sliced jerk chicken, layer on black beans, top with pineapple salsa, and add avocado slices.
Notes
