Description

A colorful and healthy meal featuring juicy shrimp and vibrant veggies, perfect for summer grilling.

Ingredients

  • Shrimp (peeled and deveined)
  • Olive oil
  • Garlic (fresh or minced)
  • Lemon juice
  • Salt & pepper
  • Your favorite seasoning blend (Cajun, Old Bay, or cumin and paprika)
  • Base: Brown rice, quinoa, or leafy greens
  • Veggies: Bell peppers, corn, avocado
  • Toppings: Cilantro, lime wedges, or spicy sauce

Instructions

  1. Marinate the shrimp by whisking together olive oil, minced garlic, lemon juice, and your chosen seasoning. Toss the shrimp in the mixture and let them marinate for about 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Skewer the shrimp if desired; soak wooden skewers in water for 30 minutes to prevent burning.
  4. Grill the shrimp for about 2-3 minutes per side until they turn pink and slightly charred.
  5. Assemble your bowl with the base, grilled shrimp, veggies, a squeeze of lime, and cilantro.

Notes

Cook shrimp just until they turn pink to avoid a rubbery texture.
