Ingredients

  • 1–1.5 pounds boneless chicken (thighs or breasts)
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced (optional)
  • 4 ounces cream cheese
  • 1 cup heavy cream (or 3/4 cup cream + 1/4 cup milk)
  • 1/2 cup grated Parmesan
  • Salt and black pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain, reserve 1 cup of pasta water, then set pasta aside.
  2. Pat the chicken dry and toss it with 1 tablespoon of Cajun seasoning. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken 4–5 minutes per side until golden and cooked through. Transfer to a plate and slice or shred.
  4. In the same skillet, add the onion and bell pepper. Sauté 3–4 minutes until soft. Add garlic and cook 30 seconds until fragrant.
  5. Reduce heat to medium, stir in cream cheese until smooth, then pour in heavy cream. Whisk to combine and let the sauce simmer gently for 2–3 minutes.
  6. Add Parmesan and the remaining Cajun seasoning, stirring until the sauce thickens slightly. Season with salt and pepper.
  7. Return the chicken and cooked spaghetti to the skillet. Toss to coat, adding reserved pasta water a splash at a time to reach desired consistency.
  8. Finish with chopped parsley and an extra sprinkle of Parmesan. Serve immediately and watch people dive in.

Use chicken thighs for juicier bites and consider variations like andouille sausage or spinach for added flavors.
