Description

This moist and sweet blueberry quick bread is an easy recipe requiring no yeast or proofing, perfect for breakfast or snacks.


Ingredients

  • 1 cup fresh blueberries (or frozen)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Mix the flour, sugar, baking powder, and salt in a large bowl.
  3. Combine the melted butter, eggs, vanilla, and milk in another bowl.
  4. Pour the wet ingredients into the dry ones and stir until just combined.
  5. Fold in the blueberries gently.
  6. Grease a loaf pan and pour in the batter.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for a bit, then transfer to a wire rack.

Notes

You can use either fresh or frozen blueberries, and adding lemon zest can enhance the flavor.
