This moist and sweet blueberry quick bread is an easy recipe requiring no yeast or proofing, perfect for breakfast or snacks.

- 1 cup fresh blueberries (or frozen)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
Instructions
- Preheat your oven to 350°F (180°C).
- Mix the flour, sugar, baking powder, and salt in a large bowl.
- Combine the melted butter, eggs, vanilla, and milk in another bowl.
- Pour the wet ingredients into the dry ones and stir until just combined.
- Fold in the blueberries gently.
- Grease a loaf pan and pour in the batter.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool in the pan for a bit, then transfer to a wire rack.
Notes
You can use either fresh or frozen blueberries, and adding lemon zest can enhance the flavor.
