Delicious dessert bars with a buttery crust, jammy filling, and a crumbly topping, perfect for any occasion.
Ingredients

- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1 cup unsalted butter, melted
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup jam (raspberry or apricot recommended) or 1 cup cream cheese filling
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 pan with parchment paper and set aside.
- Mix flour, oats, brown sugar, baking powder, and salt in a bowl. Stir in melted butter until the mixture forms coarse crumbs.
- Press about two-thirds of the crumb mixture firmly into the bottom of the pan to form the crust.
- Spread the jam or cream cheese filling evenly over the crust. Sprinkle the remaining crumb mixture and optional nuts or chips on top.
- Bake for 25–30 minutes until the top looks golden and the edges pull slightly from the pan. Let cool completely before cutting into bars.
Notes
These bars can be served warm with ice cream or whipped cream. Store leftovers in an airtight container at room temperature or refrigerate if filled with cream cheese.
