Ingredients

- 1 cup quinoa (rinsed)
- 2 cans of tuna (in water or olive oil)
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 1/2 cup bell pepper (diced)
- 1/4 cup red onion (finely chopped)
- 1/4 cup parsley (chopped)
- 1/2 cup corn (canned or frozen)
- Juice of 2 lemons
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the quinoa: In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil, then cover and reduce heat to low. Simmer until the quinoa is fluffy and water is absorbed (about 15 minutes).
- Prepare the veggies: While the quinoa cooks, chop your veggies.
- Mix it all together: In a large bowl, combine the tuna, cooked quinoa, chopped veggies, and corn. Toss gently to combine.
- Make it zesty: Drizzle olive oil and lemon juice over the salad. Season with salt and pepper and mix until coated.
- Chill: Let it sit in the fridge for at least 30 minutes to let those flavors meld.
