Ingredients
- Pasta of your choice (rotini or penne)
- Salt
- Cherry tomatoes, chopped
- Cucumber, chopped
- Bell peppers, various colors, chopped
- Red onion, chopped
- Fresh herbs (basil or parsley), chopped
- Olive oil
- Red wine vinegar
- Dijon mustard
- Honey
- Salt and pepper to taste
- Grilled chicken or chickpeas (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and rinse under cold water until cooled.
- Chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper.
- In a large bowl, toss the cooled pasta, chopped veggies, and dressing together. Add protein if desired.
- Toss in chopped fresh herbs.
- Cover the salad and refrigerate for at least 30 minutes before serving.
Notes
Letting the salad chill allows the flavors to meld together beautifully. Consider keeping the dressing separate if meal prepping.
