Description

A comforting and nutritious cabbage soup perfect for cozy nights in or gatherings with friends.


Ingredients

Scale
  • 1 medium head of cabbage (about 2 pounds)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 3 carrots (sliced)
  • 2 stalks celery (chopped)
  • 1 can diced tomatoes (14.5 oz)
  • 6 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Chop the cabbage, onions, carrots, and celery.
  2. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the onions and garlic. Cook until soft (about 5 minutes).
  3. Add the sliced carrots and chopped celery. Stir for about 3-4 minutes.
  4. Throw in the chopped cabbage, diced tomatoes, broth, thyme, and bay leaf. Stir to combine.
  5. Bring the soup to a boil, then reduce heat to low. Cover and let simmer for 30-45 minutes.
  6. Taste and add salt and pepper as needed.
  7. Ladle into bowls and garnish with fresh parsley if desired.
