Ingredients

- 1 medium head of cabbage (about 2 pounds)
- 1 large onion (diced)
- 3 cloves garlic (minced)
- 3 carrots (sliced)
- 2 stalks celery (chopped)
- 1 can diced tomatoes (14.5 oz)
- 6 cups vegetable or chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions
- Chop the cabbage, onions, carrots, and celery.
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the onions and garlic. Cook until soft (about 5 minutes).
- Add the sliced carrots and chopped celery. Stir for about 3-4 minutes.
- Throw in the chopped cabbage, diced tomatoes, broth, thyme, and bay leaf. Stir to combine.
- Bring the soup to a boil, then reduce heat to low. Cover and let simmer for 30-45 minutes.
- Taste and add salt and pepper as needed.
- Ladle into bowls and garnish with fresh parsley if desired.
