- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
- 1 1/2 cups white chocolate chips
- 1 cup crushed peppermint candies or candy cane pieces
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- Cream together the softened butter, sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
- Gradually add the dry ingredients to the wet mixture. Fold in the white chocolate chips and crushed peppermint candies.
- Scoop dollops of dough onto the prepared baking sheets, leaving space to spread. Bake for about 10–12 minutes, or until edges are golden.
- Allow cooling on the baking sheets for 5 minutes before transferring to wire racks.
Notes
For extra peppermint flavor, add a drop of peppermint extract. Store cookies in an airtight container at room temperature for up to a week.
