Description

A cozy and creamy soup that captures the rich flavors of lasagna without the fuss of layering. Perfect for a quick and comforting meal.


Ingredients

  • 1 lb ground meat (Italian sausage or ground turkey)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 8 oz cream cheese
  • 4 cups fresh spinach (or 2 cups frozen)
  • 8 oz lasagna noodles, broken into pieces
  • 1 tsp Italian seasoning
  • 1 cup Parmesan cheese, grated
  • Optional: More cheese, fresh basil or parsley, crushed red pepper flakes

Instructions

  1. Heat olive oil in a pot over medium heat. Add diced onion and minced garlic, sauté until soft and fragrant.
  2. Add ground meat and cook until browned, breaking it up into small pieces.
  3. Pour in the broth and bring to a simmer.
  4. Lower the heat and add heavy cream and cream cheese, stirring until dissolved.
  5. Add broken lasagna noodles and cook until tender, about 10-12 minutes.
  6. Stir in fresh spinach and cook until wilted, about 1-2 minutes.
  7. Add Parmesan cheese, stirring until melted.
  8. Ladle into bowls, top with additional cheese and herbs, and enjoy!

Notes

This soup tastes even better the next day and freezes wonderfully for later meals.
