- 1 lb ground meat (Italian sausage or ground turkey)
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 8 oz cream cheese
- 4 cups fresh spinach (or 2 cups frozen)
- 8 oz lasagna noodles, broken into pieces
- 1 tsp Italian seasoning
- 1 cup Parmesan cheese, grated
- Optional: More cheese, fresh basil or parsley, crushed red pepper flakes
Instructions
- Heat olive oil in a pot over medium heat. Add diced onion and minced garlic, sauté until soft and fragrant.
- Add ground meat and cook until browned, breaking it up into small pieces.
- Pour in the broth and bring to a simmer.
- Lower the heat and add heavy cream and cream cheese, stirring until dissolved.
- Add broken lasagna noodles and cook until tender, about 10-12 minutes.
- Stir in fresh spinach and cook until wilted, about 1-2 minutes.
- Add Parmesan cheese, stirring until melted.
- Ladle into bowls, top with additional cheese and herbs, and enjoy!
