- 1 lb ground protein (chicken, turkey, or Italian sausage)
- 8 oz lasagna noodles
- 2 cups spinach or kale
- 8 oz cream cheese
- 1 cup heavy cream
- 4 cups chicken broth
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- Freshly grated Parmesan cheese for topping
Instructions
- Heat a large pot over medium heat and add a splash of olive oil.
- Toss in the ground protein and cook until browned.
- Add minced garlic and chopped onions and sauté until fragrant.
- Add the cream cheese and stir in until it melts.
- Pour in the heavy cream and chicken broth, and stir until combined.
- Stir in Italian seasoning, salt, and pepper to taste.
- Break the lasagna noodles into smaller chunks and add them to the pot along with the spinach or kale.
- Let it simmer for about 15-20 minutes until the noodles are tender.
- Finish by shredding in the Parmesan cheese and stir until melted and bubbly.
- Ladle the soup into bowls and top with extra cheese and herbs for garnish.
