Description

A warm and cozy soup bringing all the flavors of classic lasagna, featuring a creamy white sauce and customizable ingredients.


Ingredients

  • 1 lb ground protein (chicken, turkey, or Italian sausage)
  • 8 oz lasagna noodles
  • 2 cups spinach or kale
  • 8 oz cream cheese
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for topping

Instructions

  1. Heat a large pot over medium heat and add a splash of olive oil.
  2. Toss in the ground protein and cook until browned.
  3. Add minced garlic and chopped onions and sauté until fragrant.
  4. Add the cream cheese and stir in until it melts.
  5. Pour in the heavy cream and chicken broth, and stir until combined.
  6. Stir in Italian seasoning, salt, and pepper to taste.
  7. Break the lasagna noodles into smaller chunks and add them to the pot along with the spinach or kale.
  8. Let it simmer for about 15-20 minutes until the noodles are tender.
  9. Finish by shredding in the Parmesan cheese and stir until melted and bubbly.
  10. Ladle the soup into bowls and top with extra cheese and herbs for garnish.
