- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon

- 1 cup packed brown sugar
- 1/2 cup molasses
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups white chocolate chips
- 1 tablespoon coconut oil (optional)

Instructions
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- Cream together softened butter and brown sugar until light and fluffy.
- Mix in molasses, egg, and vanilla extract until combined.
- Gradually add dry mixture to wet mixture, mixing until just combined.
- Wrap dough in plastic wrap and chill in the refrigerator for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll out chilled dough to 1/4 inch thick and cut with a star-shaped cookie cutter.
- Place stars on a parchment-lined baking sheet and bake for 8-10 minutes until edges are golden.
- Let cookies cool completely.
- In a microwave-safe bowl, combine white chocolate chips and coconut oil, then melt in 30-second intervals until smooth.
- Dip cooled stars in the melted white chocolate and let excess drip off. Place on parchment paper to set.
- Allow the dipped cookies to set at room temperature.
Notes
Decorate with sprinkles or edible glitter while the chocolate is still wet for extra flair. Enjoy with a cup of hot cocoa!
