Delightful ginger cookies dipped in creamy white chocolate, perfect for a cozy treat.
Ingredients

- 2 cups all-purpose flour
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup molasses
- 1 egg
- 1 tablespoon fresh grated ginger (optional)
- 1 cup white chocolate chips (or chopped chocolate)
- Optional: a pinch of sea salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, ground ginger, cinnamon, baking soda, cloves, and salt.
- In another bowl, cream together the softened butter and brown sugar until light and fluffy.
- Mix in molasses, egg, and fresh ginger if using.
- Gradually add the dry mixture into the wet, mixing well to form a soft dough.
- Drop rounded tablespoons of dough onto a lined baking sheet and bake for 8-10 minutes.
- Let them cool for a few minutes on the sheet before transferring to a wire rack.
- Melt white chocolate in a microwave-safe bowl at 30-second intervals until smooth.
- Dip half of each cookie into the melted white chocolate and let the excess drip off.
- Place them back on the cooling rack and sprinkle with sea salt if desired.
- Let chocolate harden before enjoying.
Notes
Don’t overbake to keep cookies chewy. Store in an airtight container for up to a week.
