Description

Delightful ginger cookies dipped in creamy white chocolate, perfect for a cozy treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 egg
  • 1 tablespoon fresh grated ginger (optional)
  • 1 cup white chocolate chips (or chopped chocolate)
  • Optional: a pinch of sea salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, ground ginger, cinnamon, baking soda, cloves, and salt.
  3. In another bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Mix in molasses, egg, and fresh ginger if using.
  5. Gradually add the dry mixture into the wet, mixing well to form a soft dough.
  6. Drop rounded tablespoons of dough onto a lined baking sheet and bake for 8-10 minutes.
  7. Let them cool for a few minutes on the sheet before transferring to a wire rack.
  8. Melt white chocolate in a microwave-safe bowl at 30-second intervals until smooth.
  9. Dip half of each cookie into the melted white chocolate and let the excess drip off.
  10. Place them back on the cooling rack and sprinkle with sea salt if desired.
  11. Let chocolate harden before enjoying.

Notes

Don’t overbake to keep cookies chewy. Store in an airtight container for up to a week.
