Description

A vibrant and nutritious salad featuring quinoa, tuna, avocado, and a creamy green goddess dressing.


Ingredients

  • 1 cup quinoa
  • 1 can tuna, drained
  • 1 ripe avocado
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ cup red onion, finely chopped (optional)
  • 1 cup spinach or mixed greens
  • Salt and pepper to taste
  • ½ cup Greek yogurt
  • ¼ cup fresh parsley
  • ¼ cup fresh basil
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 garlic clove, minced

Instructions

  1. Cook the quinoa: Boil water and add the rinsed quinoa. Cook for about 15 minutes until fluffy. Drain and cool.
  2. Mix that dressing: In a blender, combine yogurt, parsley, basil, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth.
  3. Combine everything: In a salad bowl, toss quinoa, tuna, avocado, tomatoes, cucumber, onion, and greens.
  4. Drizzle the dressing over the salad and toss well to coat.
  5. Taste it and add more salt or pepper if needed.
  6. Serve immediately or chill in the fridge for 30 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge. For best results, keep the dressing separate if storing for a day or two.
