Ingredients
- Fresh or frozen tortellini
- Cherry tomatoes
- Bell peppers
- Cucumbers
- Red onions
- Fresh basil or parsley
- Kalamata or black olives
- Feta or mozzarella cheese
- Olive oil
- Vinegar
- Lemon juice
- Minced garlic
- Salt
- Pepper
Instructions
- Cook the tortellini according to package instructions, usually about 3-5 minutes for fresh and 7-10 minutes for frozen. Drain and rinse under cold water.
- Chop your chosen veggies into bite-size pieces.
- In a large bowl, combine the cooked tortellini, chopped veggies, olives, and herbs.
- In a smaller bowl, whisk together olive oil, vinegar, lemon juice, minced garlic, salt, and pepper.
- Pour the dressing over the tortellini salad and gently toss to combine.
- Let the salad sit in the fridge for at least 30 minutes before serving.
