Description

Ingredients

  • Fresh or frozen tortellini
  • Cherry tomatoes
  • Bell peppers
  • Cucumbers
  • Red onions
  • Fresh basil or parsley
  • Kalamata or black olives
  • Feta or mozzarella cheese
  • Olive oil
  • Vinegar
  • Lemon juice
  • Minced garlic
  • Salt
  • Pepper

Instructions

  1. Cook the tortellini according to package instructions, usually about 3-5 minutes for fresh and 7-10 minutes for frozen. Drain and rinse under cold water.
  2. Chop your chosen veggies into bite-size pieces.
  3. In a large bowl, combine the cooked tortellini, chopped veggies, olives, and herbs.
  4. In a smaller bowl, whisk together olive oil, vinegar, lemon juice, minced garlic, salt, and pepper.
  5. Pour the dressing over the tortellini salad and gently toss to combine.
