- 2 tablespoons creamy peanut butter
- 1/4 cup soy sauce
- Juice of 1/2 lime
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 teaspoons sesame oil
- Chili flakes to taste
- Chopped peanuts (for topping)
- Fresh cilantro (for garnish)
Instructions
- Slice chicken into thin strips and chop your veggies.
- In a small bowl, mix together peanut butter, soy sauce, lime juice, garlic, and ginger to create the sauce.
- Heat sesame oil in a skillet over medium-high heat. Sauté chicken until golden brown for about 5-7 minutes.
- Add the chopped veggies and stir-fry for an additional 3-4 minutes.
- Pour the peanut sauce over the chicken and veggies, toss to coat, and serve topped with chopped peanuts and cilantro.
Notes
For a great stir-fry, keep the heat high to maintain crispness. You can also switch proteins to shrimp or tofu for variety.
