Description

A quick and flavorful stir-fry featuring chicken, veggies, and a creamy peanut sauce that’s perfect for busy weeknights.


Ingredients

  • 1 pound chicken breast, sliced thinly
  • Mixed vegetables (bell peppers, carrots, snap peas)
  • 2 tablespoons creamy peanut butter
  • 1/4 cup soy sauce
  • Juice of 1/2 lime
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 teaspoons sesame oil
  • Chili flakes to taste
  • Chopped peanuts (for topping)
  • Fresh cilantro (for garnish)

Instructions

  1. Slice chicken into thin strips and chop your veggies.
  2. In a small bowl, mix together peanut butter, soy sauce, lime juice, garlic, and ginger to create the sauce.
  3. Heat sesame oil in a skillet over medium-high heat. Sauté chicken until golden brown for about 5-7 minutes.
  4. Add the chopped veggies and stir-fry for an additional 3-4 minutes.
  5. Pour the peanut sauce over the chicken and veggies, toss to coat, and serve topped with chopped peanuts and cilantro.

Notes

For a great stir-fry, keep the heat high to maintain crispness. You can also switch proteins to shrimp or tofu for variety.
