Ingredients

  • 2 cups of cooked chicken, shredded or diced
  • 1 large cucumber, diced
  • 1 red bell pepper, diced
  • 1 cup shredded carrots
  • 1 cup of fresh cilantro, chopped
  • 1/4 cup roasted peanuts, roughly chopped
  • 2 tablespoons of lime juice
  • 2 tablespoons of fish sauce
  • 1 tablespoon of sugar
  • 1 teaspoon of chili flakes

Instructions

  1. Prep the chicken by shredding or dicing it, using rotisserie chicken for convenience if you like.
  2. Chop the cucumber, red bell pepper, and carrots finely.
  3. Mix the dressing by whisking together lime juice, fish sauce, sugar, and chili flakes until the sugar dissolves.
  4. Combine the chicken, veggies, and dressing in a large bowl, then add peanuts and cilantro last to retain their crunch.
  5. Serve the salad after letting it sit for about 10 minutes to enhance the flavors.
