Ingredients

- 2 cups of cooked chicken, shredded or diced
- 1 large cucumber, diced
- 1 red bell pepper, diced
- 1 cup shredded carrots
- 1 cup of fresh cilantro, chopped
- 1/4 cup roasted peanuts, roughly chopped
- 2 tablespoons of lime juice
- 2 tablespoons of fish sauce
- 1 tablespoon of sugar
- 1 teaspoon of chili flakes
Instructions
- Prep the chicken by shredding or dicing it, using rotisserie chicken for convenience if you like.
- Chop the cucumber, red bell pepper, and carrots finely.
- Mix the dressing by whisking together lime juice, fish sauce, sugar, and chili flakes until the sugar dissolves.
- Combine the chicken, veggies, and dressing in a large bowl, then add peanuts and cilantro last to retain their crunch.
- Serve the salad after letting it sit for about 10 minutes to enhance the flavors.
