- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 cup cornmeal
- 1 can diced tomatoes
- 2 cups cheddar cheese, shredded
- 2 tsp chili powder

- Pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef or turkey along with chopped onion and bell pepper. Add spices and cook for 5-7 minutes.
- Mix in the diced tomatoes and let simmer.
- In a bowl, combine cornmeal, baking powder, and a pinch of salt. Stir in liquid ingredients until a batter forms.
- Spread the meat mixture in a baking dish, then pour the cornbread batter on top.
- Sprinkle cheese evenly on top.
- Bake for 30-35 minutes until golden and bubbly.
- Let cool for a few minutes before serving.
