Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup cornmeal
  • 1 can diced tomatoes
  • 2 cups cheddar cheese, shredded
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef or turkey along with chopped onion and bell pepper. Add spices and cook for 5-7 minutes.
  3. Mix in the diced tomatoes and let simmer.
  4. In a bowl, combine cornmeal, baking powder, and a pinch of salt. Stir in liquid ingredients until a batter forms.
  5. Spread the meat mixture in a baking dish, then pour the cornbread batter on top.
  6. Sprinkle cheese evenly on top.
  7. Bake for 30-35 minutes until golden and bubbly.
  8. Let cool for a few minutes before serving.

Notes
