- 8 oz. fettuccine or penne pasta
- 1 lb. boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 red bell pepper
- 1 green bell pepper
- 1 medium onion
- 2 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 cup chicken broth
- 1 cup heavy cream
- Chopped cilantro (optional)
- Sliced jalapeños (optional)
- Shredded cheese (optional)
Instructions
- Boil water in a large pot and bring to a rolling boil.
- Add pasta and cook according to package directions until al dente.
- Drain the pasta and set aside, saving 1 cup of pasta water.
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper, then cook for 6-7 minutes on each side.
- Slice the cooked chicken and set aside.
- Add onions and bell peppers to the skillet and sauté for about 5 minutes.
- Stir in garlic and taco seasoning, and mix well.
- Toss in the sliced chicken.
- Pour in the chicken broth and let it simmer for 2-3 minutes.
- Add heavy cream and mix until well combined.
- Mix in the cooked pasta and reserved pasta water until desired consistency is reached.
- Serve hot with toppings of cheese, cilantro, and jalapeños.
