Description

A delightful blend of comforting pasta with zesty Tex-Mex flavors featuring tender chicken, bell peppers, and creamy sauce.


Ingredients

  • 8 oz. fettuccine or penne pasta
  • 1 lb. boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Chopped cilantro (optional)
  • Sliced jalapeños (optional)
  • Shredded cheese (optional)

Instructions

  1. Boil water in a large pot and bring to a rolling boil.
  2. Add pasta and cook according to package directions until al dente.
  3. Drain the pasta and set aside, saving 1 cup of pasta water.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Season chicken with salt and pepper, then cook for 6-7 minutes on each side.
  6. Slice the cooked chicken and set aside.
  7. Add onions and bell peppers to the skillet and sauté for about 5 minutes.
  8. Stir in garlic and taco seasoning, and mix well.
  9. Toss in the sliced chicken.
  10. Pour in the chicken broth and let it simmer for 2-3 minutes.
  11. Add heavy cream and mix until well combined.
  12. Mix in the cooked pasta and reserved pasta water until desired consistency is reached.
  13. Serve hot with toppings of cheese, cilantro, and jalapeños.
