Description

A hearty South African beef stew featuring tender meat, rich gravy, and a medley of spices and vegetables, perfect for cozy evenings.


Ingredients

  • 2 lb beef chuck or brisket, cut into cubes
  • 2 onions, chopped
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups beef stock
  • 2 tbsp paprika
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 tsp black pepper
  • 1 tsp chili powder (optional)
  • 2 tbsp flour
  • 2 tbsp oil for frying
  • 1/2 cup red wine (optional)
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium-high heat and sear the beef until brown on all sides. Remove and set aside.
  2. In the same pot, sauté onions and garlic until soft; sprinkle in flour and stir for 1 minute.
  3. Add beef stock, scraping the bottom of the pot, then return beef and add carrots, potatoes, and spices.
  4. Bring to a boil, reduce heat, cover, and simmer for 1.5 to 2 hours, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Ladle into bowls, garnish with herbs, and serve with crusty bread.
