Ingredients

- 2 lb beef chuck or brisket, cut into cubes
- 2 onions, chopped
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cloves garlic, minced
- 4 cups beef stock
- 2 tbsp paprika
- 1 tsp dried thyme
- 2 bay leaves
- 1 tsp black pepper
- 1 tsp chili powder (optional)
- 2 tbsp flour
- 2 tbsp oil for frying
- 1/2 cup red wine (optional)
- Fresh parsley or cilantro for garnish
Instructions
- Heat oil in a large pot over medium-high heat and sear the beef until brown on all sides. Remove and set aside.
- In the same pot, sauté onions and garlic until soft; sprinkle in flour and stir for 1 minute.
- Add beef stock, scraping the bottom of the pot, then return beef and add carrots, potatoes, and spices.
- Bring to a boil, reduce heat, cover, and simmer for 1.5 to 2 hours, stirring occasionally.
- Season with salt and pepper to taste.
- Ladle into bowls, garnish with herbs, and serve with crusty bread.
