A comforting tater tot casserole with ground beef, perfect for busy weeknights.
Ingredients

- 1 pound ground beef
- 32 ounces frozen tater tots
- 10.5-ounce can cream of mushroom soup
- 2 cups shredded cheddar cheese
- 1 small onion, chopped
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Optional: paprika, frozen mixed veggies, fresh bell peppers, chili powder, cumin
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef until no longer pink. Add chopped onion and minced garlic; cook for 3-4 minutes until soft.
- In a large bowl, combine cooked beef mixture with cream of mushroom soup and seasonings. Add any optional veggies if using.
- Stir in 1 cup of shredded cheddar cheese.
- In a 9×13 inch baking dish, spread the beef mixture evenly. Top with frozen tater tots.
- Sprinkle remaining cup of cheddar cheese over tater tots.
- Bake for about 45 minutes, until tater tots are golden brown and crispy.
- Let cool for 5 minutes before serving.
