Description

A cozy delight in a bowl that combines taco flavors in a deliciously comforting soup.


Ingredients

  • 1 pound ground beef (or turkey)
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can corn, drained
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cans diced tomatoes (with green chilies)
  • 1 packet taco seasoning
  • 12 cups chicken or vegetable broth
  • Shredded cheese (for topping)
  • Sour cream (for topping)
  • Avocado (for topping)
  • Tortilla chips (for crunch)

Instructions

  1. In a large pot, heat some oil and cook the onions and peppers for about 3-4 minutes until they start to soften.
  2. Add your ground beef (or turkey) and cook until it’s no longer pink. Drain the fat if needed.
  3. Toss in the black beans, kidney beans, and corn. Stir to combine.
  4. Add the diced tomatoes and pour in the broth.
  5. Sprinkle the taco seasoning over the top and mix it all together. Let it simmer for about 15 minutes.
  6. Dish up your soup and top with shredded cheese, sour cream, avocado, or any other toppings you like.

Notes

This soup is customizable, and you can easily make it vegetarian by using lentils or mushrooms and vegetable broth. Feel free to add extra spices for heat.
