Ingredients

  • 8 oz penne or rotini pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup bell peppers, mixed colors, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, sweet
  • 1 can black beans, drained and rinsed
  • 1 cup cheddar cheese, shredded
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • Fresh cilantro, for garnish

Instructions

  1. Cook the pasta: Boil a pot of salted water and add the pasta. Cook it according to package instructions; drain and rinse in cold water.
  2. Brown your meat: In a skillet over medium heat, cook your ground meat until no longer pink. Drain excess grease, add taco seasoning and a splash of water, and let simmer for 5 minutes.
