- 8 oz penne or rotini pasta
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup bell peppers, mixed colors, chopped
- 1 cup cherry tomatoes, halved
- 1 cup corn, sweet
- 1 can black beans, drained and rinsed
- 1 cup cheddar cheese, shredded
- ½ cup sour cream or Greek yogurt
- 2 tablespoons lime juice
- Fresh cilantro, for garnish
Instructions
- Cook the pasta: Boil a pot of salted water and add the pasta. Cook it according to package instructions; drain and rinse in cold water.
- Brown your meat: In a skillet over medium heat, cook your ground meat until no longer pink. Drain excess grease, add taco seasoning and a splash of water, and let simmer for 5 minutes.
- Combine everything: In a large bowl, mix the cooked pasta, meat, bell peppers, tomatoes, corn, black beans, and cheese.
- Mix the dressing: In a smaller bowl, combine sour cream (or yogurt) with lime juice, salt, pepper, and garlic powder if using.
- Combine with the salad: Pour the dressing over the salad mixture and toss until evenly coated.
