Instructions

  1. Preheat the oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment and grease lightly.
  2. Whisk eggs and sugar together until the mixture turns pale and ribbons form when you lift the whisk.
  3. Fold sifted flour into the egg mixture, adding vanilla and any zest. Keep the batter airy.
  4. Spread batter evenly in the pan and bake for 10–12 minutes until the top springs back slightly.
  5. Prepare a clean kitchen towel on a flat surface and dust it with powdered sugar.
  6. Invert the cake onto the sugared towel, peel off the parchment, and roll the cake with the towel from the short end to let it cool rolled up.
  7. Unroll the cooled cake gently, spread your filling evenly, then re-roll without the towel for a tight spiral.
  8. Chill briefly to set the filling if needed, then slice with a serrated knife for neat rounds.
