- 2 cups fresh or canned corn, drained
- 1 large cucumber, diced
- ½ cup mayonnaise
- ½ cup sour cream
- ½ cup crumbled cotija cheese
- 1 tsp chili powder
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro (optional)
Instructions
- Gather all your ingredients together.
- Combine corn in a large mixing bowl.
- Add the diced cucumber to the bowl.
- Mix in mayonnaise and sour cream.
- Crumble cotija cheese and fold it into the mix.
- Sprinkle chili powder and lime juice, then stir well. Season with salt and pepper.
- Chill the salad in the fridge for at least 30 minutes.
- Serve in a bowl garnished with fresh cilantro if desired.
Notes
Grilling fresh corn enhances the flavor. For a vegan option, use plant-based mayo and sour cream.
