- 1 cup fresh corn (canned or grilled, drained if canned)
- 1 cup cucumber (diced)
- ½ cup red onion (finely diced)
- 1 cup cherry tomatoes (halved)
- ½ cup sour cream (or Greek yogurt)
- ¼ cup mayonnaise
- Juice of 1 lime
- 1 tsp chili powder
- Salt and pepper to taste
- ½ cup crumbled Cotija cheese (or feta as a substitute)
- Fresh cilantro (optional, for garnish)
Instructions
- Prepare the chicken by shredding or chopping cooked chicken.
- Mix the dressing by whisking together sour cream, mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
- Toss chicken, corn, cucumber, red onion, and cherry tomatoes in a large bowl. Drizzle dressing over and mix well.
- Incorporate Cotija cheese gently.
- Chill in the fridge for at least half an hour before serving.
