Ingredients

  • 1 cup fresh corn (canned or grilled, drained if canned)
  • 1 cup cucumber (diced)
  • ½ cup red onion (finely diced)
  • 1 cup cherry tomatoes (halved)
  • ½ cup sour cream (or Greek yogurt)
  • ¼ cup mayonnaise
  • Juice of 1 lime
  • 1 tsp chili powder
  • Salt and pepper to taste
  • ½ cup crumbled Cotija cheese (or feta as a substitute)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Prepare the chicken by shredding or chopping cooked chicken.
  2. Mix the dressing by whisking together sour cream, mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  3. Toss chicken, corn, cucumber, red onion, and cherry tomatoes in a large bowl. Drizzle dressing over and mix well.
  4. Incorporate Cotija cheese gently.
  5. Chill in the fridge for at least half an hour before serving.
