- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 4 cups fresh strawberries, hulled and sliced
- Additional strawberries for decoration (optional)
- Mint leaves for decoration (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients: In a large mixing bowl, combine flour, sugar, baking powder, and salt.
- Add in butter, milk, eggs, and vanilla extract. Mix until just combined.
- Bake the cake batter evenly into two greased 9-inch round cake pans and bake for 25–30 minutes.
- Cool the cakes for about 10 minutes in the pans, then turn them out onto wire racks to cool completely.
- Chill your mixing bowl and beaters in the freezer for about 10 minutes.
- Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Layer one cooled cake layer on a serving plate, spread whipped cream, and layer half of your sliced strawberries.
- Repeat with the second cake layer and more whipped cream on top.
- Decorate the top with remaining strawberries and mint leaves.
- Chill the cake for at least an hour before serving.
Notes
This cake can be assembled a day ahead and tastes better after chilling. Use fresh strawberries or any favorite berries.
