Description

Delicious, savory meatballs coated in a sticky Mongolian sauce, perfect for any weeknight dinner or impressing guests.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 green onions, chopped
  • Salt and pepper to taste
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, egg, minced garlic, minced ginger, chopped green onions, and a sprinkle of salt and pepper. Mix it well and form into balls about 1–1.5 inches in size.
  2. Heat a large pan over medium heat with a touch of oil. Sear the meatballs for about 4–5 minutes on each side until browned.
  3. In a saucepan, combine soy sauce, brown sugar, honey, minced garlic, and minced ginger over medium heat until the sugar dissolves. Add the cornstarch and water mixture to thicken the sauce.
  4. Pour the sauce over the meatballs and let it simmer for about 5 minutes, allowing the flavors to meld.

Notes

Great for meal prep; the meatballs hold up well and can be stored in an airtight container for leftovers.
