Ingredients

- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Colored hard candies (like Jolly Ranchers)
Instructions
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, beat the softened butter and sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Preheat your oven to 375°F (190°C). Roll out the chilled dough to about ¼ inch thickness.
- Use cookie cutters to cut out shapes, making a smaller window shape in the center of each cookie.
- Crush the colored candies and fill the cookie cutouts with the crushed candy.
- Place cookies on a parchment-lined baking sheet and bake for 8-10 minutes or until edges are lightly golden.
- Let them cool completely on a wire rack.
