Description

Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Colored hard candies (like Jolly Ranchers)

Instructions

  1. In a bowl, whisk together the flour, baking powder, and salt.
  2. In a separate bowl, beat the softened butter and sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Wrap the dough in plastic wrap and chill for at least 30 minutes.
  5. Preheat your oven to 375°F (190°C). Roll out the chilled dough to about ¼ inch thickness.
  6. Use cookie cutters to cut out shapes, making a smaller window shape in the center of each cookie.
  7. Crush the colored candies and fill the cookie cutouts with the crushed candy.
  8. Place cookies on a parchment-lined baking sheet and bake for 8-10 minutes or until edges are lightly golden.
  9. Let them cool completely on a wire rack.
