Instructions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Roll tablespoon-sized pieces of dough into balls and coat in sprinkles.
- Place the dough balls 2 inches apart on the prepared baking sheets and gently flatten.
- Bake for 9-11 minutes or until the edges are just golden, then cool on a wire rack.
Notes
For a nutty twist, use almond extract instead of vanilla. Store cookies in an airtight container for up to a week, or freeze for up to 3 months.
