Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 jalapeño, seeds removed and finely chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup shredded cheddar or cotija cheese (optional)
  • 1/2 cup Greek yogurt (or sour cream)
  • 1/4 cup mayonnaise
  • 2 tbsp buttermilk (or milk)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1–2 tsp hot sauce (adjust for heat)
  • 1 tbsp lime juice
  • Salt and black pepper to taste

Instructions

  1. Whisk together Greek yogurt, mayonnaise, and buttermilk until smooth.
  2. Add garlic powder, onion powder, hot sauce, and lime juice, whisking until fully combined.
  3. Season with salt and pepper; adjust hot sauce to your taste.
  4. Assemble the salad: Start with mixed greens as a base.
  5. Scatter corn, black beans, tomatoes, and onion over the greens.
  6. Top with diced avocados.
  7. Drizzle spicy ranch dressing just before serving and toss gently to combine.
  8. Serve extra dressing on the side if desired.
