- 1 lb chicken thighs (boneless)
- 2 tablespoons gochujang
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon garlic (minced)
- 1 teaspoon ginger (grated)
- 2 cups green cabbage (shredded)
- 1 cup carrots (shredded)
- 1/4 cup cilantro (chopped)
- 1 tablespoon lime juice
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 4 burger buns
- Optional toppings: sliced radishes, jalapeños, extra gochujang sauce
Instructions
- In a bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, and grated ginger. Mix well.
- Toss chicken thighs in the marinade and let sit for at least 30 minutes.
- Heat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden brown.
- In a bowl, combine shredded cabbage, carrots, and cilantro.
- Dress with lime juice, sesame oil, salt, and pepper, and mix well.
- Toast burger buns until golden and crispy.
- Assemble sandwiches by placing grilled chicken on the bottom bun, topping with crispy slaw, and additional toppings if desired.
- Cap with top bun, press, and serve.

Let the chicken marinate longer for enhanced flavor. Ensure the buns are toasted to avoid sogginess.
