Ingredients

  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic (minced)
  • 1 teaspoon ginger (grated)
  • 2 cups green cabbage (shredded)
  • 1 cup carrots (shredded)
  • 1/4 cup cilantro (chopped)
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 4 burger buns
  • Optional toppings: sliced radishes, jalapeños, extra gochujang sauce

Instructions

  1. In a bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, and grated ginger. Mix well.
  2. Toss chicken thighs in the marinade and let sit for at least 30 minutes.
  3. Heat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden brown.
  4. In a bowl, combine shredded cabbage, carrots, and cilantro.
  5. Dress with lime juice, sesame oil, salt, and pepper, and mix well.
  6. Toast burger buns until golden and crispy.
  7. Assemble sandwiches by placing grilled chicken on the bottom bun, topping with crispy slaw, and additional toppings if desired.
  8. Cap with top bun, press, and serve.
