A creamy and bold potato soup with vibrant Cajun spices that warms the soul and excites the palate.
Ingredients

- 4 cups potatoes, peeled and cubed
- 1 medium onion, diced
- 2 stalks celery, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- 8 oz Andouille sausage or smoked sausage, sliced (optional)
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Chopped green onions and a squeeze of lemon, for finishing
Instructions
- Heat 1 tablespoon butter and 1 tablespoon olive oil in a pot over medium heat. Add onion, celery, and green pepper. Cook until softened, about 5 minutes. Add garlic and sauté for another minute.
- Push the veggies to the side and add the sliced Andouille. Brown for 3–4 minutes.
- Add cubed potatoes, Cajun seasoning, and broth. Bring to a simmer and cook until potatoes are fork-tender, about 15 minutes.
- Reduce heat and stir in heavy cream and remaining butter. Use an immersion blender to blend half the soup for a creamier texture.
- Season with salt and pepper, and add a squeeze of lemon. Top with chopped green onions and serve hot.
Notes
For vegetarian option, use vegetable broth and omit the sausage. This soup can also be made ahead and stored in the fridge for up to 4 days or frozen for up to 3 months.
