- 2 cups long-grain white rice
- 1 lb ground meat (chicken, pork, or a mix)
- 1 cup chopped onions
- 1 cup chopped bell peppers
- 1 cup chopped celery
- 2 tsp Cajun seasoning
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper (optional)
- 4 cups chicken or beef broth
- 1/2 cup chopped green onions (for garnish)
- 2 cloves garlic (minced, optional)
Instructions
- In a large skillet, heat a splash of oil over medium heat. Add chopped onions, bell peppers, and celery. Cook until softened, about 5 minutes.
- Add the ground meat, cooking until browned and crumbled.
- Stir in Cajun seasoning, garlic, salt, and pepper.
- Add uncooked rice and toast for a couple of minutes, stirring often.
- Pour in the broth and bring to a boil. Reduce heat, cover, and let it simmer for 20-25 minutes, or until the rice is cooked.
- Fold in chopped green onions before serving.
- Scoop into bowls and enjoy!
Notes
For a vegetarian version, swap the meat for lentils or mushrooms. Experiment with different meats or add a splash of hot sauce for extra flavor.
