Ingredients

  • 2 cups long-grain white rice
  • 1 lb ground meat (chicken, pork, or a mix)
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 1 cup chopped celery
  • 2 tsp Cajun seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper (optional)
  • 4 cups chicken or beef broth
  • 1/2 cup chopped green onions (for garnish)
  • 2 cloves garlic (minced, optional)

Instructions

  1. In a large skillet, heat a splash of oil over medium heat. Add chopped onions, bell peppers, and celery. Cook until softened, about 5 minutes.
  2. Add the ground meat, cooking until browned and crumbled.
  3. Stir in Cajun seasoning, garlic, salt, and pepper.
  4. Add uncooked rice and toast for a couple of minutes, stirring often.
  5. Pour in the broth and bring to a boil. Reduce heat, cover, and let it simmer for 20-25 minutes, or until the rice is cooked.
  6. Fold in chopped green onions before serving.
  7. Scoop into bowls and enjoy!

Notes

For a vegetarian version, swap the meat for lentils or mushrooms. Experiment with different meats or add a splash of hot sauce for extra flavor.
