Ingredients

- 3 cups all-purpose flour
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg (optional)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup molasses
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the flour, ginger, cinnamon, nutmeg, baking soda, and salt. Set aside.
- In another bowl, beat the butter and brown sugar together until creamy. Add the molasses, egg, and vanilla. Mix well.
- Gradually add the dry ingredients to the wet mixture.
- Roll the dough into balls (about 1 tablespoon each) and place them on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes, or until they’re set but still soft.
- Let them cool for a few minutes before transferring to a wire rack.
Notes
Chill the dough for 30 minutes before rolling for softer cookies. Decorate cooled cookies with icing if desired.
