Description

Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1/4 cup coarse sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and molasses until well combined.
  5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  6. Roll the dough into 1-inch balls and coat each ball in coarse sugar.
  7. Arrange the dough balls about 2 inches apart on the prepared baking sheets.
  8. Bake for 8-10 minutes until the edges are set but the centers are still soft.

Notes

For a lighter version, you can replace half the butter with unsweetened applesauce.
