Ingredients

- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 cup unsulfured molasses
- 2 cups powdered sugar (for icing)
- 1 egg white or 1 tablespoon of meringue powder
- Food coloring (optional)
Instructions
- In a large mixing bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In another bowl, blend together butter and both sugars until fluffy. Add egg and molasses, mixing until combined.
- Gradually add the dry ingredients to the wet mixture until a smooth dough forms.
- Wrap the dough in plastic and refrigerate for at least 2 hours.
- Preheat oven to 350°F (175°C). Roll out the chilled dough to 1/4 inch thick and cut into shapes.
- Bake for 8 to 10 minutes until edges are firm but centers remain soft. Cool on a baking sheet before transferring to a wire rack.
- Prepare icing by mixing powdered sugar with egg whites until soft peaks form, and decorate cookies once cooled.
Notes
Dough can be frozen for later use. Ensure dough is sufficiently chilled for best results.
