A delightful and manageable version of macaroni salad, perfect for potlucks and gatherings.
Ingredients

- 1 cup small pasta (macaroni or any preferred pasta), uncooked
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup celery, chopped
- 1/4 cup red onion, diced
- 1/4 cup bell pepper, diced
- Salt and pepper, to taste
- Optional: Hard-boiled eggs, chopped pickles or relish, shredded cheese
Instructions
- Cook the Pasta: Boil salted water, add macaroni and cook until al dente (6-8 minutes). Drain and rinse under cold water.
- Mix It All Together: In a large bowl, combine the cooked pasta with chopped celery, red onion, and bell pepper.
- Dress It Up: In another bowl, whisk together mayonnaise, Dijon mustard, salt, and pepper. Pour over the pasta and toss until coated. Add optional extras if desired.
- Chill and Serve: Cover and refrigerate for at least 30 minutes before serving.
Notes
Store leftovers in an airtight container and consume within 2-3 days. Great as a wrap or nacho topping.
