A comforting and easy slow cooker meal featuring chicken meatballs and gnocchi in a flavorful tomato sauce.

- 1 pound ground chicken
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 jar (24 oz) crushed tomatoes
- 6 oz fresh spinach
- 1 package (16 oz) gnocchi
- Extra Parmesan for serving
Instructions
- In a large bowl, mix the ground chicken, bread crumbs, grated Parmesan, egg, garlic, Italian seasoning, and a pinch of salt and pepper. Roll the mixture into bite-sized meatballs.
- Place the meatballs in the slow cooker. Pour the crushed tomatoes over them, and stir in the fresh spinach.
- Set the slow cooker to low for 6 hours or high for 3 hours.
- About 30 minutes before serving, stir in the gnocchi and cook for 20-30 minutes until they float to the top.
- Spoon into bowls, sprinkle with more Parmesan cheese, and enjoy!
Notes
For best results, avoid overmixing the meat. Customize with herbs or spices as desired.
