Description

A comforting and easy slow cooker meal featuring chicken meatballs and gnocchi in a flavorful tomato sauce.


Ingredients

  • 1 pound ground chicken
  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 jar (24 oz) crushed tomatoes
  • 6 oz fresh spinach
  • 1 package (16 oz) gnocchi
  • Extra Parmesan for serving

Instructions

  1. In a large bowl, mix the ground chicken, bread crumbs, grated Parmesan, egg, garlic, Italian seasoning, and a pinch of salt and pepper. Roll the mixture into bite-sized meatballs.
  2. Place the meatballs in the slow cooker. Pour the crushed tomatoes over them, and stir in the fresh spinach.
  3. Set the slow cooker to low for 6 hours or high for 3 hours.
  4. About 30 minutes before serving, stir in the gnocchi and cook for 20-30 minutes until they float to the top.
  5. Spoon into bowls, sprinkle with more Parmesan cheese, and enjoy!

Notes

For best results, avoid overmixing the meat. Customize with herbs or spices as desired.
