Ingredients

  • 2 lbs ribeye steak, thinly sliced
  • 1 large yellow onion, thinly sliced
  • 2 green bell peppers, thinly sliced
  • 1 packet dry onion soup mix
  • 1 cup beef broth
  • 8 slices provolone cheese
  • 4 large hoagie rolls, split
  • 2 tablespoons butter, melted

Instructions

  1. Place ribeye steak, onions, and bell peppers in the slow cooker.
  2. Sprinkle the onion soup mix evenly over the meat and vegetables.
  3. Pour beef broth over everything.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Preheat the oven broiler.
  6. Use a slotted spoon to fill the hoagie rolls with the meat mixture.
  7. Top each sandwich with 2 slices of provolone cheese.
  8. Brush the tops of the rolls with melted butter and broil for 1-2 minutes until cheese is bubbly.
