- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 cup diced tomatoes
- 1/2 cup sliced Kalamata olives
- 1/4 cup feta cheese
- Juice of 1 lemon
- 3–4 garlic cloves, minced
- 1 tablespoon dried oregano
- Salt and pepper, to taste
Instructions
- Season the chicken breasts with salt, pepper, and half of the oregano.
- Add the chicken broth, diced tomatoes, garlic, olives, lemon juice, and remaining oregano to the slow cooker.
- Set your slow cooker to low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix it back into the sauce.
- Top with crumbled feta cheese and serve.
Notes
For a vegetarian option, consider swapping the chicken for eggplant or chickpeas. Don’t skip the olives for that authentic Greek flavor!
