Description

A delicious and effortless slow cooker Greek chicken dish that combines juicy chicken, vibrant tomatoes, and tangy feta for a healthy weeknight dinner.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 1/2 cup sliced Kalamata olives
  • 1/4 cup feta cheese
  • Juice of 1 lemon
  • 34 garlic cloves, minced
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and half of the oregano.
  2. Add the chicken broth, diced tomatoes, garlic, olives, lemon juice, and remaining oregano to the slow cooker.
  3. Set your slow cooker to low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks and mix it back into the sauce.
  5. Top with crumbled feta cheese and serve.

Notes

For a vegetarian option, consider swapping the chicken for eggplant or chickpeas. Don’t skip the olives for that authentic Greek flavor!
