Ingredients

  • 2 pounds beef chuck roast
  • 45 medium Yukon gold potatoes
  • 1 stick butter
  • 56 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup beef broth
  • 12 teaspoons salt
  • 1 teaspoon pepper
  • A sprinkle of parsley for garnish

Instructions

  1. Chop your veggies.
  2. Peel and chop your potatoes into rustic chunks.
  3. Dice the onion and mince the garlic.
  4. Slice the chuck roast into manageable pieces.
  5. Layer the potatoes at the bottom of the slow cooker.
  6. Add the chopped onions on top.
  7. Place the beef on top of the potatoes and onions.
  8. Drizzle with salt and pepper.
  9. Melt the butter and stir in the minced garlic.
  10. Pour the garlic butter over the beef and potatoes.
  11. Pour in the beef broth.
  12. Cover and cook on low for about 8 hours, or high for 4-5 hours.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for future meals. Add a splash of beef broth when reheating to keep it juicy.
