Ingredients

- 2 pounds beef chuck roast
- 4–5 medium Yukon gold potatoes
- 1 stick butter
- 5–6 cloves garlic, minced
- 1 onion, chopped
- 1 cup beef broth
- 1–2 teaspoons salt
- 1 teaspoon pepper
- A sprinkle of parsley for garnish
Instructions
- Chop your veggies.
- Peel and chop your potatoes into rustic chunks.
- Dice the onion and mince the garlic.
- Slice the chuck roast into manageable pieces.
- Layer the potatoes at the bottom of the slow cooker.
- Add the chopped onions on top.
- Place the beef on top of the potatoes and onions.
- Drizzle with salt and pepper.
- Melt the butter and stir in the minced garlic.
- Pour the garlic butter over the beef and potatoes.
- Pour in the beef broth.
- Cover and cook on low for about 8 hours, or high for 4-5 hours.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days or freeze for future meals. Add a splash of beef broth when reheating to keep it juicy.
