Description
A cozy and comforting slow cooker soup featuring tomatoes, basil, and cheesy tortellini.
Ingredients

- 1 (28-ounce) can of crushed tomatoes
- 4 cups vegetable broth
- 1 medium onion, chopped
- 3–4 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 (9-ounce) package of refrigerated cheese tortellini
- 1 cup heavy cream
- Fresh basil leaves for garnish
Instructions
- Optional: Sauté onion and garlic in olive oil until fragrant.
- Combine crushed tomatoes, vegetable broth, onion and garlic, dried basil, and oregano in the slow cooker. Stir well.
- Set slow cooker on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the tortellini.
- Gently stir in the heavy cream once the tortellini is cooked.
- Adjust seasoning with salt and pepper, and serve hot garnished with fresh basil.
Notes
Serve with crusty bread or sprinkle with grated Parmesan cheese for added flavor.
