- 1 pound ground beef
- 1 can (15 oz) corn, drained
- 1 can (15 oz) beans (your choice), rinsed and drained
- 1 can (15 oz) diced tomatoes (optional)
- 4–5 medium potatoes, diced
- 2 cups shredded cheese (cheddar recommended)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp chili powder
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef with the chopped onion and garlic until fragrant. Drain excess fat.
- In your slow cooker, layer the diced potatoes, followed by the beef mixture, corn, beans, and diced tomatoes (if using).
- Sprinkle half of the cheese on top.
- Add chili powder, salt, and pepper to taste.
- Cover and set your slow cooker on high for about 4 hours, or low for 6-8 hours.
- About 15 minutes before serving, sprinkle the remaining cheese on top and let it melt.
- Serve and enjoy!
