Description

A hearty and comforting casserole packed with ground beef, corn, beans, and cheese, perfect for busy days.


Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) beans (your choice), rinsed and drained
  • 1 can (15 oz) diced tomatoes (optional)
  • 45 medium potatoes, diced
  • 2 cups shredded cheese (cheddar recommended)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with the chopped onion and garlic until fragrant. Drain excess fat.
  2. In your slow cooker, layer the diced potatoes, followed by the beef mixture, corn, beans, and diced tomatoes (if using).
  3. Sprinkle half of the cheese on top.
  4. Add chili powder, salt, and pepper to taste.
  5. Cover and set your slow cooker on high for about 4 hours, or low for 6-8 hours.
  6. About 15 minutes before serving, sprinkle the remaining cheese on top and let it melt.
  7. Serve and enjoy!
