Description

Comforting and easy Slow Cooker Chicken Pot Pie, filled with tender chicken, rich gravy, and veggies, all topped with a flaky crust.


Ingredients

Scale
  • 2 pounds boneless, skinless chicken breast
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1 cup corn
  • 1 onion, chopped
  • 3 cups chicken broth
  • 1 cup cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 package of refrigerated pie crusts

Instructions

  1. Prep the chicken by seasoning it with salt and pepper in the slow cooker.
  2. Add the chopped onion, carrots, peas, and corn over the chicken.
  3. Mix the chicken broth, cream of chicken soup, garlic powder, and thyme in a separate bowl, then pour over the chicken and veggies.
  4. Cook on low for 6-8 hours or high for 4-5 hours.
  5. Prepare the pie crust about 30 minutes before serving, rolling it out and cutting one crust to fit over the slow cooker.
  6. Pop the pie crust on top of the filling, cover, and cook for another 30 minutes on high.
