Comforting and easy Slow Cooker Chicken Pot Pie, filled with tender chicken, rich gravy, and veggies, all topped with a flaky crust.
Ingredients

- 2 pounds boneless, skinless chicken breast
- 1 cup carrots, diced
- 1 cup frozen peas
- 1 cup corn
- 1 onion, chopped
- 3 cups chicken broth
- 1 cup cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 package of refrigerated pie crusts
Instructions
- Prep the chicken by seasoning it with salt and pepper in the slow cooker.
- Add the chopped onion, carrots, peas, and corn over the chicken.
- Mix the chicken broth, cream of chicken soup, garlic powder, and thyme in a separate bowl, then pour over the chicken and veggies.
- Cook on low for 6-8 hours or high for 4-5 hours.
- Prepare the pie crust about 30 minutes before serving, rolling it out and cutting one crust to fit over the slow cooker.
- Pop the pie crust on top of the filling, cover, and cook for another 30 minutes on high.
