A comforting and easy slow cooker chicken noodle soup that’s perfect for chilly days or when you’re feeling under the weather.
Ingredients

- 2 boneless, skinless chicken breasts or thighs
- 3 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups egg noodles
- 1 tablespoon dried thyme
- 1 tablespoon dried parsley
- Salt and pepper to taste
Instructions
- Prep your ingredients: Chop the carrots, celery, and onion.
- Layer it up: In your slow cooker, add all ingredients except the noodles and season with salt, pepper, and herbs.
- Add broth: Pour in enough chicken broth to cover everything.
- Set it & Forget it: Cook on low for 6-8 hours or until chicken shreds easily.
- Noodle time: About 30 minutes before serving, add in the egg noodles.
- Shred and serve: Shred the chicken in the pot, mix everything, and serve.
Notes
For extra flavor, use leftover chicken and fresh herbs. Let the soup cool before storing it in the fridge for leftovers.
