A flavorful and easy-to-make Slow Cooker Chicken Jambalaya that brings comfort and taste to your dinner table.
Ingredients

- 2 cups of chicken breasts (diced)
- 1 cup of andouille sausage (sliced)
- 1 cup of bell peppers (chopped)
- 1 cup of onion (chopped)
- 3 cloves of garlic (minced)
- 1 can of diced tomatoes (14.5 oz)
- 2 cups of chicken broth
- 1 tablespoon of Cajun seasoning
- 1 teaspoon of dried thyme
- 1 cup of long-grain rice
- Salt and pepper to taste
- Fresh parsley or green onions for garnish (optional)
Instructions
- Prep the Ingredients: Chop, dice, and mince all ingredients.
- Layer It All In the Slow Cooker: Start with chicken and sausage at the bottom, followed by bell peppers, onion, garlic, diced tomatoes, chicken broth, Cajun seasoning, and thyme. Stir in the rice.
- Set It and Forget It: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.
- Fluff and Serve: Stir after cooking, serve hot, and garnish with parsley or green onions.
Notes
Feel free to add shrimp in the last 30 minutes of cooking for extra flavor. Adjust cayenne for spice level.
